When a recipe calls for grated ginger, it’s all good and fine until you actually try to grate the stuff and it turns into a juicy mess. Next time you buy fresh ginger, store a nob in the freezer. It will last extra-long for those who tend to use ginger liberally, and grating it will be a breeze. Store it in saran wrap, or a small baggie to ward off freezer burn and stay recipe-ready. Ginger will keep in the freezer for up to three months.
